Ragda Pattice is a popular street food recipe of India. Mumbai’s Ragda Pattice is loved by every foodie who enjoys chaat recipe. Pattice are made up of a mixture of boiled potatoes and some spices. These pattice are then served with the Ragda which is nothing but spicy and chatpata white peas gravy. Ragda Pattice is a very simple chaat recipe to make. Recipe:

Ingredients –

For Pattice:
8-10 Boiled Potatoes
1 Cup Soaked Flattened Rice (Poha)
1-1.5 Ginger-Garlic Paste
½ Teaspoon Turmeric Powder
1.5 Teaspoon Red Chilli Powder
2 Teaspoon Dhana Jeera Powder
1 Teaspoon Chaat Masala
Salt

For Ragda:
250 Grams Soaked White Peas
2-3 Chopped Green Chillies
½ Inch Chopped Ginger (Adrak)
1 Teaspoon Cumin Seeds (jeera)
½ Teaspoon Asafoetida (hing)
½ Teaspoon Turmeric Powder (Haldi)
2 Teaspoon Dhana Jeera Powder
1.5 – 2 Red Chilli Powder
1 Teaspoon Garam Masala
Salt
Oil

For Serving:
Green Chutney
Dates-Tamarind (Khajur-Imli) Chutney
Chopped Onions
Coriander Leaves

Method –
1. Soak White Peas (safed matar) for 8-10 hours.
2. To make ragda, heat oil and add cumin seeds, asafoetida, chopped ginger and chopped green chillies.
3. Stir fry the ingredients.
4. Now add turmeric powder, dhana jeera powder, red chilli powder and garam masala. Fry the masalas well.
5. Now add soaked white peas and stir fry it for a while.
6. Add water as per requirement and salt as per taste.
7. Pressure cook for 5-6 whistles.
8. Once the ragda is cooked, open lid of the cooker and mash the peas little bit.
9. For pattice mash boiled potatoes and add soaked flattened rice (poha), turmeric powder, dhana jeera powder, red chilli powder, chaat masala, ginger-garlic paste and salt.
10. Mix all the ingredients well.
11. Prepare pattices out of the mixture. Make the pattices little bit thick.
12. Shallow fry the pattices on the pan. Fry the pattice till they are golden brown.
13. Remove the pattices in a plate.
14. Pour some ragda over the pattice.
15. Add some green chutney, tamarind-dates chutney, chopped onion and coriander leaves.
16. Ragda Pattice is ready to eat.
