The original meaning of "side out" goes back many decades where a team serving could only score points. Each team wanted the side out to score points. Scoring today is "rally" points and the term " side out" is just a chant to fluster the opposing team's server. This presenter should have done a bit of volleyball history research.
To clarify what the idiot in the video messed up, the dictionary definition: "the termination of a team's right to serve" A sort of "this side (team) is out of (terminates) the right to serve".
In a simpler explanation, it is that point made by my team on the opponents' service. It means the service right has changed and now I got the right to serve. Now if I serve and lose the point, it is again a side-out.
Or a side-out is the change in the right to serve.
